January as a time to look back and review things. This blog started as all about cheese and our Deli. Unfortunately the deli closed as was not in a busy enough area and we have progressed from making cheese to supplying baked goods.
Today I am making some Chicken Puffs for a friend and they are so easy I thought I might share.
You will need
Phyllo Pastry
Oil for brushing
poached chicken shredded
mushroom sauce made with diced mushrooms, conrflour and stock from the poached chicken
Sesame seeds to decorate
I normally poach the chicken in water to which I have added, seasoning, fresh parsley thyme and rosemary as well as some salt.
The phyllo sheets are laid out and cut into 5 separate strips. i,e, open phyllo and cut vertically into 5 strips. these are then folded as triangles encasing a spoonful of the chicken mixtures in each. Each sheet is first brushed with a little oil and it is folded to look like a Samosa.
Place on baking sheets and then brush with little oil and sprinkle over sesame seeds. Bake at 200C for about 20 minutes checking to ensure they do not burn.
I find it helps to remove from baking sheet whilst hot and put on wooden boards which absorb the excess oil.
Great as canapes at cocktail parties or make a lovely lunch with a side salad. Serve warm
